Chole Masala Recipe | Dhaba style Chole masala

Chole masala is one of the favorite dish for most of the Indians I think so. Likewise its my favorite too. I can still remember, the first time when I had this masala. It was mind- blowing. I tried this recipe with chole poori. Actually, I had in my mind not to try the recipes out there, so I added different masala powder and it really came out well. Try this style and tell me how is it.

Lets get the ingredients ready……

Take a bowl and add 1 cup of chole or white chana. Wash it twice with clean water and soak it for about 8 hours or overnight.

Then add the soaked chole into the pressure cooker and the Cloves, Elachi, and lavangam. To get the dark color for chole add in one tea bag or you can add the extracted tea water. ( You can skip the adding the tea bags.)

Heat oil in the pan and add the onion paste. give it a nice mix and stir well.

Now add in the ginger, garlic paste, and stir it until the paste turns golden brown.

Then add the tomato paste and mix it well. Cook the paste until the oil separates from the paste.

Its time to add the masala powder ( coriander powder, cumin powder, red chili powder, curry powder, garam masala, and salt). Cook until it turns into a thick paste.

Next, add in the cooked chole and water. Cover the pan with a lid and let them cook in high flame for about 8-10 minutes.

Cook until the chole coats well and thickens. Then add the cooked coriander leaves. Leave them for 2 minutes in high flame and turn off the stove.

Fry some ginger pieces and add in the masala while serving. Enjoy it hot with chole poori , chapathi and dosai.

  • 1 and half cup tomato paste

  • 1/2 tbsp Ginger, Garlic paste

  • 1 tbsp masala powder each ( red chili powder, cumin powder, coriander powder, garam masala powder, curry powder)

  • 1 inch lavangam, 2 Elachi, 2 cloves

  • 1 tea bag (optional)

  • Chopped coriander leaves

  • Salt ( required)
