Schezwan Sauce | How to make schezwan chutney

Schezwan Sauce / Chutney is originated from the Sichuan Province of China. In China, they have a separate cuisinefor it, which is called as Schezwan/Szechuan cuisine. It gives a strong flavor of hot chilly and a little bit of sweetness. You can have this sauce with noodles, dumplings, fried rice, etc., Okay, now let us see “How to make Schezwan Sauce”.

Why I picked this recipe?

I love to try all kinds of spicy food around the world. And when it comes to spicy noodles, I thought Schezwan sauce would be the perfect match to it. Then, I tried the recipe and it came well.

Sauce Making

First, Soak the red chilies in hot water for about 30 minutes. And transfer the soaked chilies in a mixer and grind it into a smooth paste.

Chilli paste

Heat a pan and add in 5 tbsp of oil. Then add chopped garlic and ginger. Sault, well until it turns lite brown.

Heating oil

Now add the chili paste and mix it well. Pour 1/4 cup of water in the mixer and add in the water to the paste.

Cover the pan with a lid and let it cook for 15 to 20 minutes in the medium flame, till the oil separates from the paste.

Next, add in 1/2 tbsp crushed pepper, 2 tbsp tomato sauce, 1 tbsp sugar(adjust the quality as per your taste), 1/4 tbsp salt. Give all a quick mix and let it sit for another 5 minutes.

That’s it. Transfer the sauce /chutney to a bowl and enjoy. To use the sauce in future put it in a glass jar with a tight lid and store it in the refrigerator.
