Hotel Style White Kurma | Vellai Kurma recipe

Here is one of the recipes that you can find on the hotels of South India. Mostly you can see this recipe in the Hotel Saravana Bhavan. Yes, I’m talking about Vellai Kurma otherwise known as white kurma which is commonly served with chapati. Today we are going yo learn how to make hotel style white kurma/ vellai kurma.

Let’s get ready with the ingredients….

First, let us make the paste for the kurma. For that, take a mixer jar and add in raw cashew nuts, shredded coconut, cinnamon, cloves, fennel seeds, poppy seeds, elachi, and green chilies. Add some water and grind into a nice paste.

Next, take a pan and add in 2 tbsp oil and let it heat. Once after the oil gets heated, add the fennel seeds and curry leaves. Let them crack well. Next add in the chopped onions, and saute them well.

Now add the paste and one cup of water. Turn the stove to low flame and let them cook until the raw smell goes out. ( It takes about 10 minutes).

Add the required salt and the boiled vegetables. Mix them all together. Now on the high flame cook the kurma for about 5 minutes.

That’s it your white kurma/ Vellai kurma is ready to serve with chapathi.

Ingredients

  • 1 cup Shredded Coconut

  • 1/4 cup raw cashew nuts

  • 1 tbsp Fennel Seeds, 1 tbsp poppy seeds, 2 cloves, 2 Elachi, 1 inch cinnamon

  • 4 Green Chilies ( against to your taste)

  • 1 cup chopped onions

  • 1 and half cup boiled/ seamed vegetables

  • Salt ( required)

Directions
